A full-bodied and beautifully complex white wine from Burgundy
The estate
While the history of the Bichot family dates back to 1214, it was in 1350 that they settled in Burgundy. The trading house established in Monthélie in 1831, under the impetus of Bernard Bichot, experienced a rapid rise during the 19th century, becoming notably the official supplier to the Court of Sweden. An independent and family-owned house, Albert Bichot is one of those great names that mark the viticultural landscape and the influence of Burgundy wines. Today, the 6th generation has been running the company since 1996, harmoniously blending modernity with family tradition.
The Albert Bichot house now owns more than 100 hectares of vineyards, spread from north to south of Burgundy, and grouped into 6 prestigious estates: the Domaine Long-Depaquit, located in Chablis, in the Yonne, the Domaine du Clos-Frantin and Château Gris, both located in Nuits-Saint-Georges, the Domaine du Pavillon, in Pommard. Dedicated to the wines of Mercurey, it was in 2013 that the Domaine Adélie was bought by Albert Bichot. The estate is named in tribute to the name of Albert Bichot's daughter, born in 2003, thus perpetuating the family heritage from generation to generation. The beautiful vineyard of the Domaine de Rochegrès in the Moulin À Vent appellation joined the family business in 2014.
The vineyard
This Grand Cru "Les Clos" from the Domaine Long-Depaquit 2018 by Albert Bichot is a Chablis wine made from two plots of 1.5 hectares. Averaging 30 years old, the vines are planted on Kimmeridgian clay-limestone soils composed of very hard marl sometimes colored with ochre. The most extensive of the climates of the Chablis Grand Cru appellation, "Les Clos" benefits from a southwest exposure to the setting sun and allows the blending of two plots with different and complementary characters.
Located mid-slope, the first plot benefits from slightly higher temperatures than the second and offers wines of great breadth, rich and fat. The second plot, at the top of the slope, protected from the north winds by the nearby forest, offers wines on tension and with more marked acidity. The blending of these two plots signs the delicate complexity of this Chablis Grand Cru.
Vinification and aging
To respect the integrity of the fruit, the grapes are harvested by hand. The vinification is carried out 65% in stainless steel tanks and 35% in oak barrels from 1 to 5 years old, just like the aging. This Chablis Grand Cru is aged in barrels and tanks for 10 months and then undergoes a final aging on fine lees in stainless steel tanks for 6 months.

Nose
The nose opens on a refined bouquet, where the floral touches from the highest plot harmoniously blend with the aromas of dried fruits, such as hazelnut and roasted almond, coming from the mid-slope.

The palate, full-bodied and structured, reveals a beautiful energy carried by a subtle acidity that delicately supports the whole.
