Tasting

Nose
The aromatic bouquet is particularly expressive, releasing delicate scents of red fruits and stone fruits, enriched by subtle spicy notes that bring complexity and refinement.

Palate
On the palate, this wine stands out for its remarkable structure and balance. The tannins are present but perfectly integrated, supported by harmonious and discreet woody notes. The finish, long and persistent, ends on an elegant note of bitter chocolate that signs the personality of this grand cru.

Food and wine pairings

This Grand Cru pairs perfectly with finely cooked red meats, such as a beef fillet or a veal chop. It will also happily accompany game of all sizes, whether prepared in marinade, stew or simply roasted. Its structure and complexity allow it to harmoniously associate with the majority of mature cheeses.

Service and aging

Serve between 16-17°C. Aeration in a decanter one hour before tasting will allow it to reveal its full aromatic palette. This grand cru has excellent aging potential and can be kept until around 2027, or even longer under good storage conditions.

A Burgundy Grand Cru with a remarkable structure and complex aromas

The property

Founded in 1831 by Bernard Bichot, the Albert Bichot house is a pillar of viticulture in Burgundy, with family roots dating back to 1214. Today led by Albéric Bichot, the sixth generation, it extends over 100 hectares across six domains, from Chablis to Beaujolais. The house stands out for its dual status as a merchant and owner of grand crus, its pioneering commitment to organic farming, and its ability to express the diversity of Burgundy terroirs with aromatic purity and remarkable balance.

The vineyard

This Grand Cru Domaine du Clos Frantin is a Grands-Echezeaux wine from a 0.25 hectare plot named "Champs traversins", located in the commune of Flagey-Echezeaux. This exceptional terroir, facing east and peaking at 300 meters altitude, is characterized by very stony brown limestone soils that give the wine its minerality and complexity. The vines, averaging 35 years old, benefit from deep rooting that allows them to draw all the richness and diversity of the terroir.

Vinification and aging

Vinification begins with manual harvesting allowing a rigorous selection of grapes. Fermentation takes place in thermoregulated oak conical vats, ensuring optimal extraction of aromas and tannins. The maceration, lasting 20 to 28 days, is followed by aging in oak barrels for 16 to 18 months, with a proportion of 50 to 70% new barrels that bring structure and complexity to the wine.
