Description
Balance and aromatic richness of a great chardonnay from Domaine Au Pied du Mont-Chauve
The property
Daughter of one of the greatest winemaking families in Burgundy, Francine Picard took over the estate historically run by her father in the late 1990s. The Domaine Au Pied du Mont Chauve extends over the municipalities of Chassagne-Montrachet, Puligny-Montrachet and Saint-Aubin, in the heart of the most beautiful climates and terroirs of Burgundy's vineyards.
In a desire for synergy between the earth and the wines, Francine Picard cultivates her plots respecting the principles of biodynamics and applies herself with passion and extreme attention to produce wines reflecting the identity of their terroir.
Coming from a vineyard of 110 hectares worked in "agro-ecology", the chardonnay and pinot noir of Domaine Au Pied du Mont Chauve are recognized for their quality, precision and elegance.
Since May 2019, Antoine Lepetit de la Bigne, a specialist in biodynamic viticulture, has joined the Domaine's team as Technical Director.
The vineyard
The origin of this Chassagne-Montrachet 1er Cru Les Vergers dates back to the last century when fruit trees were planted in this area. An ideal terroir for white wines, the vines were planted in the 1960s and 1970s and replanting is currently underway on half of the surface.
Located above the Chenevottes, the plots are northeast facing, on a slight slope, on a pebbly soil rich in minerals and composed of white limestone marls.
The vintage
The 2019 vintage is marked by a hot and dry year with three heatwaves between June and late August. If quantities are moderate due to lack of water, the quality is exceptional.
The chardonnays are rich and ripe while presenting a beautiful balance and great finesse. 2019 is a great vintage for ripe pinot noirs presenting intensity, balance and finesse.
Vinification and aging
Harvested and sorted by hand, the grapes are pressed whole. In the pure respect of Burgundian tradition, alcoholic fermentation is carried out in barrels.
The aging lasts 18 months on lees, including 10 months in oak (Burgundian piece).

Tasting
This wine reveals both on the nose and on tasting a rich aromatic palette composed of vegetal fragrances based on plants (vetiver, ylang ylang) and magnolia flower. The complexity of this cuvée is balanced by a beautiful straightness.
Food and wine pairings
Capons with morels, veal chops with cream, goat cheeses or even Comté match with the aromatic palette of this cuvée.

For optimal tasting, serve at 12°C.
