Description
A rich and refined Provence rosé wine stemming from a unique plot
The estate
Founded by the Templars in the 13th century and then bequeathed to the Knights of Malta, over the years, Domaine Peyrassol has become a reference among fine Côtes de Provence wines.
In 2001, Philippe Austruy acquired the estate and thus perpetuated its ancient history. In 2002, this enthusiast carried out major work by reorganising the vineyard and modernising the winemaking facilities, in order to excel in the production of wines that reveal the quality of their terroir.
The vineyard
Château Peyrassol rosé 2021 stems from a vineyard that is currently converting to organic farming. Sowing cereals in between the rows, improving the quality of the soil, plot selection, manual harvesting on the oldest plots... taking the utmost care of the vineyard in order to get the very best out of the vines
The wine
Clos Peyrassol rosé is made, exclusively during the best vintages since 2009, from grapes harvested on one of the estate’s most beautiful plots. Located at the foot of the Templar buildings, the vineyard’s name, the Clos plot, refers to the low walls that surround it.
The vintage
The 2021 vintage is marked by significant climatic instability. An episode of frost at the end of April had little impact on the vineyard, which had not yet budded. Due to their deep roots, the vines resisted a particularly dry summer. Thanks to the Mistral wind, the major fire that occurred during mid-August did not come close to the vineyards. At the beginning of September, a stormy episode along with hail destroyed crops situated a few kilometres away from the estate, which was not affected due to the natural barrier of the hills. Finally, the floods recorded in the vicinity did not impact the estate. Despite these extreme conditions, the grapes harvested showcased an exceptionally high quality.
Vinification and ageing
Following a delicate pneumatic pressing, the juices are separated before being vinified in temperature-controlled stainless steel tanks and stoneware jars. After fermentation, a light racking is carried out in order to keep only the best of the lees.

The tasting
Colour
This wine showcases a beautiful pale pink colour.
Nose
Precise, the nose exudes concentrated fragrances of white cherry blossom, citrus fruit and white-fleshed fruit (peach, pear).
Palate
The palate is seduced by this wine’s fullness, freshness and aromatic richness. The finish is persistent with a savoury salinity.
Food and wine pairing
A sea bream carpaccio or a squid ceviche would pair with this 2021 Clos Peyrassol rosé wine beautifully.
Storage
