The property
Passionate and seasoned winemakers, Jean Dirler and his wife Ludivine brilliantly manage this family estate founded in 1871 and passed down from father to son for five generations. A pioneer of biodynamics, the Domaine Dirler-Cadé has been cultivating its vines according to these principles since 1998.
The vineyard
The Grand Cru Saering, a jewel of the Alsace appellation, is characterized by a terroir of marl and limestone of great complexity. Facing southeast, this vineyard benefits from a soil composed of Buntsandstein sandstone and Oligocene limestone, giving the wines a distinctive minerality and a beautiful natural acidity. The 28-year-old Riesling vines plunge their roots into this exceptional terroir, capturing all the richness and mineral diversity of the place.
Vinification and aging
To shape this Riesling Grand Cru "Saering" Late Harvest 2015, the grapes are hand-picked and meticulously sorted on each vine in order to retain only ideally botrytised bunches. After gentle pneumatic pressing and natural static settling, fermentation takes place in stainless steel tanks thanks to indigenous yeasts. The wine then benefits from an 11-month aging on lees, thus refining its aromatic complexity and structure.
