The wine
Already mentioned in the possessions of the monks as early as 1170 for the particularity of its climate, the Premier Cru "La Servoisine" offers a refined and typical expression of its terroir of origin.
The vineyard
Located at the extreme north of the commune of Givry, near the Premier Cru Clos du Cellier aux Moines, are the vines of the Servoisine plot. These, over 45 years old, flourish on a total area of 0.67 hectares. The Servoisine plot benefits from an optimal climate, thanks to its full south exposure. As for the soil, it is made up of 34% clay and nearly 40% silt, this deep soil, enriched by a high percentage of active limestone, contributes to the exceptional quality of the grapes.
The vintage
The 2023 vintage in Burgundy is distinguished by a generous harvest and optimal maturity of the grapes, despite sometimes unstable weather. After a spring punctuated by a few episodes of frost, the summer, both hot and dry, was tempered by timely rainfall, thus providing ideal conditions for a homogeneous maturation of the harvest. The result gives birth to an exceptional vintage, carried by a remarkable harmony between the fruit, the freshness, and the structure. A promising balance that augurs a beautiful aging potential.
Vinification and aging
This Burgundy wine is the result of a goldsmith's work in the vineyard as well as in the cellar: to guarantee quality, the grapes are carefully harvested and sorted by hand. Once destemmed, the berries are placed in a vat for about 15 days of maceration and fermentation. Finally, the wine is aged in Burgundian barrels of 228 liters.
