Food and wine pairings
This sparkling wine pairs perfectly as an aperitif with smoked salmon toasts, Brillat Savarin samosas or oysters. It also wonderfully accompanies a roast ham, a citrus sea bass ceviche, meringues or macarons.
Cellaring
This cuvée can be cellared for 10 to 15 years.

The estate
The Domaine Huet, founded in 1928 by Victor Huet and his son Gaston, is located in the heart of the Vouvray appellation. The estate is recognised for its pioneering biodynamic practices, respecting the balance of the soil and the environment, and revealing the authenticity of its terroirs. Today, the vineyard extends over 30 hectares, exclusively planted with Chenin Blanc, the emblematic grape variety of the region.
The vineyard
This Brut 2019 is a sparkling wine from Vouvray originating from three historic plots: Le Haut-Lieu, Le Mont and Clos du Bourg. The soils are varied, mixing clay, limestone and silica. The vineyard is cultivated biodynamically, with vines aged 10 to 15 years.
Vinification and ageing
The first fermentation takes place entirely in tank, with indigenous yeasts. The second fermentation takes place in the bottle. The ageing on lees lasts 36 months, bringing finesse and complexity to the wine.
