The property
At the foot of the majestic Schlossberg hill, in the heart of the vines and roses, the Domaine Weinbach, founded in 1612 by the Capuchin monks, owes its name to the stream that crosses it. The property, acquired by the Faller brothers in 1898, is today managed by the Faller Family. The estate stands out for its biodynamic and organic practices, certified by Demeter and Ecocert, and for its commitment to quality and the expression of the terroir.
The vineyard
This Riesling Grand Cru "Schlossberg" comes from vines aged 60 to 70 years, located halfway up the prestigious Grand Cru Schlossberg. This exceptional terroir is characterized by granitic, stony and shallow soils at the top but deeper at the bottom of the slope. The steep south-facing slopes benefit from excellent drainage and warm up quickly, offering ideal conditions for this late-ripening Riesling.
Vinification and aging
The grapes of the Riesling Grand Cru "Schlossberg" Cuvée Sainte Catherine 2008 are hand-picked at optimal maturity. After a gentle pressing in whole clusters in pneumatic presses, the must ferments with indigenous yeasts in old oak vats. The aging continues for 14 months in these large old oak barrels, which do not impart woody notes but allow a slow evolution of the wine.
