Tasting

Nose
Its nose reveals aromas of hazelnut and roasted almond.

Palate
The attack is supple and indulgent. Slender, it is carried by a fine acidity. Over time, its minerality is revealed on notes of chalk, flint and a saline and iodized finish.

A remarkable Chablis Grand Cru

The property

Since the 17th century, the Droin Family has perpetuated a unique know-how, passionately passed down through thirteen generations. Four centuries of family history embodied today by Benoît Droin, an emblematic figure of Chablis. Awarded three stars by the RVF, elected Winemaker of the Year 2021 by the Hachette Wine Guide in Burgundy, and present on the most prestigious tables, the estate stands out as an essential reference in Chablis in an expressive, generous and deliciously faithful style to each terroir.

The vineyard

The estate extends over 26 hectares, spread over the four levels of appellation: Petit Chablis, Chablis, nine Premiers Crus and five Grands Crus. This diversity of terroirs allows the estate to produce wines expressing all the richness and complexity of the Kimmeridgian soils characteristic of the region.

Vinification and aging

The pressing is carried out using a pneumatic press, followed by a settling of 12 to 24 hours at about 15°C. The fermentation, carried out with indigenous yeasts, takes place partially in stainless steel tanks and partially in barrels. The malolactic fermentation is systematically carried out before the blend, which takes place after 8 to 10 months of aging. If necessary, a fining is carried out, followed by a light filtration before bottling.
