Characteristics and Tasting Tips for the Bourgogne Aligoté 2025 from Joseph Drouhin
Tasting
Colour
The wine shows a pale yellow hue with green highlights, hinting at its youth and freshness.
Nose
The nose opens with fresh fruit aromas, with notes of pear and peach, followed by delicate touches of white flowers.
Palate
The palate is appealing for its vibrancy, supported by a well-defined yet seamlessly integrated acidity, offering a pleasing balance between freshness and roundness.
Food and Wine Pairing
This wine is a delightful match for seafood, oysters and shellfish, which it enhances with its natural vivacity. It also pairs beautifully with white fish, simply grilled or poached and served with citrus or fresh herbs. Vegetarian dishes, such as mixed salads or preparations made with fresh goat's cheese, also find an excellent partner in it. Served chilled as an aperitif, it can be enjoyed on its own or lends itself elegantly to the preparation of a traditional kir.
A Bourgogne Aligoté from Maison Joseph Drouhin, Balancing Freshness and Harmony
The estate
Founded in Beaune in 1880 by Joseph Drouhin, the house has grown over the generations to become a major player in Burgundy today, and a pioneer of organic and biodynamic viticulture. Led by the fourth generation, the founder's four great-grandchildren Philippe, Véronique, Laurent and Frédéric, the house offers a range of around ninety appellations.
The vineyard
The grapes used for this Burgundy wine come mainly from the Hautes Côtes de Beaune, the Hautes Côtes de Nuits and the Côte Chalonnaise. These terroirs, located at relatively high altitude, offer conditions conducive to preserving the grape variety's natural acidity, on clay-limestone soils. Grapes are sourced from partner growers under a rigorous set of specifications that ensures consistency with the house style.
Vinification and ageing
Vinification of the Bourgogne Aligoté 2025 begins with pneumatic pressing, a gentle technique that limits the extraction of overly harsh compounds. After settling, the musts are transferred to tank for alcoholic fermentation, and the wine is then aged in tank for approximately six to ten months in order to preserve the purity of the fruit and the grape variety's characteristic freshness.
Grape variety
This wine is made from Aligoté, an ancient grape variety that is emblematic of Burgundy.
