The estate
The story of the Vincent Girardin house began in 1980. Then aged 19 and born into a winemaking family since the 17th century, Vincent Girardin started his viticultural activity with the two hectares of vines inherited from his parents. A winemaker at heart and passionate, Vincent Girardin quickly made a name for himself among the great names of the Côte de Beaune. Founded in 1992, the Vincent Girardin house has since become one of the most beautiful references of the Côte de Beaune, in Burgundy. Since 2000, the talented Éric Germain has been following in Vincent Girardin's footsteps, passionately revealing the exceptional terroirs of the Premiers Crus and Grands Crus around Meursault and Puligny-Montrachet.
The vineyard
The plot from which this Volnay Village “Vieilles Vignes” by Vincent Girardin comes is located southeast of the eponymous village on the appellations “Les Blanches”, “Les grands Champs” and “Les Pluchots”. The 65-year-old vines are planted on a limestone, pebbly, ferruginous, reddish soil and on brown loams.
Vinification and ageing
Harvested manually and then sorted, the grapes are then crushed and destemmed. After a cold maceration for several days, fermentation begins with temperature control, pumping over and punching down. After a pneumatic pressing, ageing in barrels (about 30% new) for 14 months. One month before bottling, the wines are assembled in a vat without any fining and with only a light filtration. Bottling follows the lunar calendar.
