A Chablis Premier Cru True to the Minerality of the Côte de Léchet Terroir
The Estate
Domaine Bernard Defaix was founded in 1959 in Milly, a hamlet of Chablis, in Burgundy, by Bernard Defaix on an initial area of 2 hectares. Today run by his sons Sylvain and Didier, the estate covers 27 hectares, all located within the commune of Chablis. Committed to organic farming through to the cellar since 2012, it stands out for its particular attachment to the Côte de Léchet climat, which it considers emblematic of its identity.
The Vineyard
The vines for this cuvée are located in the Côte de Léchet climat, a premier cru of the Chablis appellation situated on the left bank of the Serein. The soils, very stony and rich in marine fossils, rest on Kimmeridgian-type clay-limestone marls. The vineyard is farmed organically, with soil work by ploughing and a measured use of sulphur and copper for plant protection.
Vinification and Ageing
The Chablis 1er Cru "Côte de Léchet" 2025 is crafted using the estate's organic methods, with the harvest swiftly brought to the winery and gentle pressing limiting the oxidation of the musts. Vinification takes place in stainless steel tanks or oak barrels depending on the cuvée, followed by ageing on fine lees designed to preserve the precision, purity and minerality inherent to the terroir.
Grape Variety
100% Chardonnay.
