The estate
Nicknamed “Boll” by those from Champagne and “Bolly” by the English, the timeless and legendary Bollinger Champagne House forms part of a small circle of three great Champagne houses. Bollinger champagne’s style is defined through its remarkable precision, which is brought to every moment of production. With a respect for tradition, riddling done by hand, natural corks for magnum reserve bottles and the last permanent cooper in the region, excellence has symbolised Bollinger champagne culture since its creation in Aÿ. More than just an art, it is a heritage.
The vineyard
Bollinger's uniqueness comes from its 174 hectares divided into seven main vineyards in Champagne, 85% of which are Grands Crus and Premiers Crus, making the house one of the few to produce its own grapes for its blends. Pinot Noir is the house's signature grape variety and represents 60% of the vineyard's vines.
The wine
The standard-bearer of the Bollinger House, the Special Cuvée owes its name to Georges Bollinger, who, in 1911 and decided to follow his British agent’s idea because he found the name "Brut sans année" (BSA) unsuitable for such a subtle champagne. Presented in a very elegant case, the iconic Special Cuvée version 007 will delight lovers of great champagnes. Several versions of this Special Cuvée 007 edition have been produced. In accordance with the French Evin law, we have chosen to offer a sober and sleek black version on which James Bond does not appear.
Winemaking and ageing
Special Cuvée 007 is a Brut champagne with a dosage between 8 to 9 grams per litre. Benefiting from a longer ageing time than the rules set out by the Champagne appellation.

Tasting
Colour
Special Cuvée 007's delicate colour reveals the distinctive golden hue of black grape varieties, as well as a fine effervescence.
Nose
The nose expresses complex aromas, notably spices and ripe fruit. There are gourmet notes of baked apple, compote and yellow fruit, especially peach.
Palate
On the palate, Special Cuvée 007 stands out due to its balance between liveliness, structure and great length. Its fine and pleasant effervescence is enveloped in notes of brioche, fresh nuts, spices and yellow fruit.
To serve
In order to highlight its style and aromas, we recommend serving Special Cuvée 007 during a convivial moment at a temperature between 8 and 10°C. You may choose to drink this champagne now or let it age for a few more years in the cellar.
Food and wine pairing
Special Cuvée 007 will pair perfectly with all types of fish, especially raw fish and sushi. It will also pair nicely with shellfish, a delicious grilled lobster or langoustines, or indeed wtih white meats, poultry, cured ham and certain cheeses, such as Parmesan.
