The vineyard
This cuvée of Bollinger's Vieilles Vignes Françaises comes from two mythical plots located in Aÿ: Les Chaudes Terres and Clos Saint Jacques. Indeed, their ungrafted vines constitute one of the last vestiges of pre-phylloxera Champagne. These miraculously preserved vineyards, classified as Grand Cru, are cultivated using the traditional method of layering.
The wine
The "Vieilles Vignes Françaises" Blanc de Noirs seeks to transcribe the authenticity embodied by the two legendary plots from which it originates. Its packaging is inspired by the historical codes of the cuvée while recalling the exceptional heritage of the House. The bottles of this 2014 vintage champagne are numbered and entirely hand-dressed.
Vinification and aging
Exclusive use of the cuvée. This Bollinger Blanc de Noirs champagne benefits from a maturation time twice as long as the rules of the appellation.
