Description
Characteristics and Tasting Tips for Les Passagers "Fiole" by Clandestin
Tasting notes
Appearance
The colour is a pale yellow, enlivened by a fine, persistent mousse, the hallmark of a carefully executed second fermentation.
Nose
The nose reveals aromas of fresh almond, juicy pear and apricot, enhanced by a touch of honey and white spices. A chalky minerality completes this aromatic palette.
Palate
On the palate, the wine is taut and saline, carried by a creamy texture and the richness of white fruit. Vibrant acidity is accompanied by nuances of toasted cereals, leading into a long, saline and iodine-tinged finish.
Food and wine pairings
This Champagne is ideally paired with oysters and raw fish such as sashimi, whose briny freshness it highlights. It is also delicious with grilled fish or fresh goat's cheese, whose milky texture it brings to the fore.
A single-parcel Champagne from the Côte des Bar by Clandestin
The estate
Founded in 2015 in the Aube, Clandestin was born from the meeting of Benoît Doussot and Bertrand Gautherot, winegrower at Domaine Vouette & Sorbée. Now led by Benoît Doussot, this micro-négoce draws on a network of winegrowers in the Côte des Bar who are committed to organic viticulture. With no family vineyard, Clandestin takes a finely tuned geological approach to the terroirs of the Aube and favours natural winemaking without dosage, in order to reveal parcels that have long remained discreet.
The vineyard
Les Passagers "Fiole" comes from a terroir in the Côte des Bar, in the Aube. The vines are cultivated and harvested by hand, with the aim of expressing this Champagne terroir as precisely as possible.
Vinification and ageing
The grapes for Les Passagers "Fiole" are vinified through spontaneous fermentation, carried out with native yeasts alone and without unnecessary additives. The wine is then aged in a neutral vessel before further maturation on lees in bottle, then disgorged without dosage, in the pure Brut Nature tradition that characterises the entire Clandestin range.
Grape variety
This Champagne is made from Chardonnay.
