A Saint-Émilion with remarkable depth
The property
Nestled on the limestone plateau of Saint-Émilion, the Château Canon has been writing its history since 1760, when the corsair Jacques Kanon became its owner. Acquired by Maison Chanel in 1996, the estate has since undergone extensive restructuring, both of the vineyard and the infrastructure. Classified as a Premier Grand Cru of Saint-Émilion, it has been managed since 2015 by Nicolas Audebert, who is also in charge of Rauzan-Ségla for the Chanel group. Château Canon today embodies one of the major references of its appellation, praised for the finesse and elegance of its wines.
The vineyard
Spread over 32 hectares, 20 of which are in one piece, the Château Canon vineyard occupies a privileged position on the limestone plateau of Saint-Émilion, facing south/southwest. Located at 87 meters above sea level, it benefits from excellent natural ventilation, while the ancient walls that border its plots offer precious protection against spring frosts.
The vintage
The year 1988 was marked by a mild winter followed by a beautiful but cool spring. The summer proved to be hot and dry. Flowering began on June 8 with little flower absorption. The harvest took place from October 1 to 10 under variable weather, with a yield of 31 hl/ha.
Vinification and aging
The vinification of Château Canon 1988 was carried out in accordance with Bordeaux traditions, with carefully controlled fermentation to preserve the freshness of the fruit and delicately extract the tannins. Aging in French oak barrels allowed the wine to develop its aromatic complexity and structure.
Blend
Merlot and cabernet franc, according to the traditional Saint-Émilion blend.
