The property
Nestled on the limestone plateau of Saint-Émilion, the Château Canon has been writing its history since 1760, when the privateer Jacques Kanon became its owner. Acquired by Maison Chanel in 1996, the estate has since undergone a vast restructuring, both of the vineyard and the infrastructure. Classified as a Premier Grand Cru of Saint-Émilion, it has been managed since 2015 by Nicolas Audebert, who is also in charge of Rauzan-Ségla for the Chanel group. Château Canon today embodies one of the major references of its appellation, praised for the finesse and elegance of its wines.
The vineyard
Spread over 32 hectares, 20 of which are in one piece, the Château Canon vineyard occupies a privileged position on the limestone plateau of Saint-Émilion, facing south/southwest. Located at an altitude of 87 meters, it benefits from excellent natural ventilation, while the ancient walls that border its plots offer precious protection against spring frosts.
The vintage
The year 1998 began with a mild winter, followed by a colder than normal and rainy April. Flowering began from May 27. The summer was marked by beautiful weather, with temperatures gradually increasing over the months, allowing for optimal ripening of the grapes.
Vinification and aging
For Château Canon 1998, the harvest was carried out entirely by hand, with a first selection during the cut in the vineyards and a second on the sorting table. The harvest began in late morning to avoid dew and excess moisture. The merlots were harvested from September 26 to October 3, followed by the cabernet francs on October 4 and 5, and the cabernet sauvignons on October 9. Alcoholic fermentation took place in thermoregulated oak vats, followed by a maceration of 18 to 23 days at 29-32°C. Malolactic fermentation took place in underground stainless steel tanks and in barrels. Aging lasted 18 to 20 months in barrels (70% new), with quarterly rackings and fining with fresh egg whites 6 months before bottling, without filtration.
Blend
Château Canon 1998 is composed of 80% merlot and 20% cabernet franc.
