The property
Founded in the 1940s by Camille and Maurice Raimbault, Domaine du Pré Semelé now extends over 20 hectares, spread over 45 plots near Sancerre, in the Loire wine region. Currently led by Julien and Clément Raimbault, this family estate stands out with its Les Chasseignes cuvée, recognized as one of the best sauvignons in the world. With a majority production in sauvignon blanc, the estate combines tradition and innovation, while preserving a family and artisanal structure.
The vineyard
Le Cotelin comes from a 0.70 hectare plot located on a Kimmeridgian marl terroir, benefiting from a particularly favorable southeast exposure. The 50-year-old vines are cultivated according to the principles of organic farming. This specific Sancerre terroir gives the wine its characteristic minerality and distinctive structure.
Vinification and aging
Manual harvest. The pressing, long and delicate, extends over 3h30 to extract the juice with precision while avoiding vegetal flavors. Vinification takes place without the addition of enzymes or sulfites, with settling after 48 hours of cold stabilization. Alcoholic fermentation is carried out with indigenous yeasts in oak barrels and 600-liter barrels. The total aging lasts 18 months, including 12 months in vats and demi-muids, then 6 months in tanks after racking and blending. Bottling takes place in the spring, on a fruit day, without fining or filtration.
