The estate
Since its creation in 1818 by the couple Elisabeth Salmon and Nicolas-François Billecart, the Champagne Billecart-Salmon House has remained independent, preserving for 7 generations the entirety of its know-how and the demand for the quality of its cuvées.
The vineyard
The vineyard of the Billecart-Salmon House extends from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way to get closer to an authentic fruit and reflection of the quality of these great Champagne terroirs.
The wine
This Elisabeth Salmon cuvée is a true tribute to the co-founder of the House. The soul of this exceptional woman is found in this champagne with a unique character and unparalleled brilliance and purity. Moreover, the expression of the best terroirs of pinot noir and chardonnay completes this great wine shaped by a know-how recognized worldwide. From the 2008 vintage, the Elisabeth Salmon cuvée changes its visual identity.
Vinification and aging
10% of the pinot noir in this cuvée is vinified in red from grapes from Valofroy, a plot of Mareuil-sur-Aÿ composed of old steep vines facing south. Stainless steel tank vinification precedes maturation on lees for a duration of 11 years. The dosage of this Rosé Champagne is 7 g/liter.
Blend
This vintage 2009 champagne is the result of a blend of pinot noir (55%) from Mareuil-sur-Aÿ and Aÿ as well as chardonnay (45%) from the Grands Crus of the Côte des Blancs.

Tasting
Color
Bright, the salmon pink color is adorned with subtle coppery reflections.
Nose
The nose is ample and of beautiful freshness. As the wine breathes, fragrances of citrus peels and jelly of red and black small fruits harmoniously blend with fruity (blackcurrant, wild blackberry, blueberry), spicy and floral (violets) notes.
Palate
Subtle alliance of power, minerality and finesse, the palate exhales delicious aromas of panettone, candied clementines and ginger to lively chalky notes and citron zest.
Food and wine pairing
A poached lobster or a dish based on tomato and rhubarb are choice pairings with this Cuvée Elisabeth Salmon Rosé 2009 from Billecart-Salmon.
Service and aging
For optimal tasting, serve between 11 and 12 degrees. This champagne can be kept in cellars for more than 10 years.
