Tasting
Nose
The nose opens up to intense aromas of cherry and liquorice, accompanied by subtle woody notes that add extra complexity.
Palate
On the palate, the wine is indulgent and supple, offering a silky texture and a beautiful concentration of red and black fruits. The tannins are well defined, giving a harmonious structure to the whole.
Food and wine pairings
This wine pairs perfectly with grilled red meats, a porcini risotto or even an aged mimolette cheese.

A delicate and fruity red wine from Burgundy
The property
The history of the estate dates back to 1984, when Didier Montchovet, a winegrower's son from Nantoux, bought a 0.5 hectare plot. Passionate, he adopted biodynamic practices from the start, thus becoming the first estate certified by Demeter. His visionary commitment to respecting the terroir accompanied the gradual expansion of the estate. Boris Champy, former technical director of Louis Latour, took over the estate while respecting this same philosophy, while bringing his expertise and enthusiasm. Today, the Domaine Boris Champy extends over 12 hectares, including plots on the Hautes-Côtes de Beaune and Pommard, emblematic Burgundy terroirs.
The vineyard
"Aux Coucherias" is a Beaune wine made from vines planted in the 1960s, on a west-facing clay-limestone slope. The soil, rich in red clay, gives a unique density and texture to the wine's tannins. Enclosed by dry stone walls, this plot is a true haven of biodiversity, promoting ecological balance thanks to the presence of rare thermophilic plants.
Vinification and ageing
The grapes are harvested by hand at full maturity. The vinification is done by gentle extraction, with a proportion of whole harvest, then the ageing continues for 12 months in barrels, 30% of which are new. This process preserves the freshness and typicity of the terroir while bringing an elegant structure to the wine.
