Tasting

Nose
The nose is precise and intense, revealing aromas of ripe citrus, white flowers and hints of honey.


Palate
In the mouth, this chardonnay reveals a taut and chiselled texture, carried by a beautiful length and a dynamic structure. The final woody note is perfectly integrated, offering remarkable harmony.

Food and wine pairings

This wine pairs perfectly with gourmet dishes such as roast poultry, smoked salmon, a fennel sea bass fillet, a gratin dauphinois or even an aged comté.

The property

The history of the estate dates back to 1984, when Didier Montchovet, a winegrower's son from Nantoux, bought a 0.5 hectare plot. Passionate, he adopted biodynamic practices from the start, thus becoming the first estate certified by Demeter. His visionary commitment to respecting the terroir accompanied the gradual expansion of the estate. Boris Champy, former technical director of Louis Latour, took over the estate respecting this same philosophy, while bringing his expertise and enthusiasm. Today, the Domaine Boris Champy extends over 12 hectares, including plots on the Hautes-Côtes de Beaune and Pommard, emblematic Burgundy terroirs.

The vineyard

"Presse Verticale 382" is a Bourgogne Hautes-Côtes de Beaune wine from the "Montagne de Cras" plot at 382 metres altitude, where the vines rest on stony and clay soils.





Vinification and ageing

The particularity of this cuvée lies in the use of a vertical press, a traditional tool that allows slow and gentle pressing, guaranteeing clear and high-quality juices. After fermentation in 228-litre barrels, the ageing on lees lasts about 12 months, with 50% new barrels. The wine is then refined for a few months in tank before bottling. No filtering, fining or cold stabilisation is carried out, allowing the wine to retain its natural structure.
