Nose

A precise and mineral Bourgogne white wine
The property
The history of the estate dates back to 1984, when Didier Montchovet, a winemaker's son from Nantoux, bought a 0.5 hectare plot. Passionate, he adopted biodynamic practices from the start, thus becoming the first estate certified by Demeter. His visionary commitment to respecting the terroir accompanied the gradual expansion of the estate. Boris Champy, former technical director of Louis Latour, took over the estate while respecting this same philosophy, bringing his expertise and enthusiasm. Today, the Domaine Boris Champy extends over 12 hectares, including plots on the Hautes-Côtes de Beaune and Pommard, emblematic Burgundy terroirs.
The vineyard
"Presse Verticale 429" is a Bourgogne wine from small plots located at over 400 metres altitude, benefiting from a great diversity of marl and clay soils on limestone bedrock.
Vinification and ageing
The particularity of this cuvée lies in the use of a vertical press, allowing for slow and gentle pressing to obtain high quality juices. Fermentation takes place in 600 litre barrels, followed by ageing on lees for 12 months, with a third of new barrels. The wine is then refined for several months in tank before bottling, without filtration or fining, in order to preserve all the richness and natural structure of the wine.
Blend
100% golden aligoté, a grape variety from old massal selections with low yields, thus offering very beautiful maturities.
