The property

The history of the estate dates back to 1984, when Didier Montchovet, a winemaker's son from Nantoux, bought a 0.5 hectare plot. Passionate, he adopted biodynamic practices from the start, thus becoming the first estate certified by Demeter. His visionary commitment to respecting the terroir accompanied the gradual expansion of the estate. Boris Champy, former technical director of Louis Latour, took over the estate while respecting this same philosophy, while bringing his expertise and enthusiasm. Today, the Domaine Boris Champy extends over 12 hectares, including plots on the Hautes-Côtes de Beaune and Pommard, emblematic Burgundy terroirs.

The vineyard

Montagne 382 is a Bourgogne Hautes-Côtes de Beaune wine from the "Montagne de Cras" plot, located at an altitude of 382 meters. The soil there is stony and clayey, adding complexity to the terroir. This 3-hectare terroir is also surrounded by natural areas rich in biodiversity, promoting ecological balance around the vine.

Vinification and ageing

The harvest is carried out manually, at full maturity. Vinification is done by gentle extraction, with a small proportion of whole harvest, then the ageing lasts 12 months, 25% of which is in new oak barrels.

100% chardonnay.
