Nose

A Beaune Premier Cru wine imbued with elegance and intensity

The estate

The history of the estate dates back to 1984, when Didier Montchovet, a winegrower's son from Nantoux, bought a 0.5 hectare plot. Passionate, he adopted biodynamic practices from the start, thus becoming the first estate certified by Demeter. His visionary commitment to respecting the terroir accompanied the gradual expansion of the estate. Boris Champy, former technical director of Louis Latour, took over the estate, respecting the same philosophy, while bringing his expertise and enthusiasm. Today, the Domaine Boris Champy extends over 12 hectares, including plots on the Hautes-Côtes de Beaune and Pommard, emblematic Burgundy terroirs.

The vineyard

The "Vignes Franches" cuvée is a Beaune wine from a 21 ares plot, ideally located on the south-facing slope of the appellation. The soil, with a thin layer of clay and limestone, forces the vines to draw deeply on their resources. Surrounded by dry stone walls, the vineyard is sheltered from external influences, which promotes early ripening of the grapes and gives the wine a particular finesse.

Vinification and ageing

The harvest is carried out manually at full maturity. Vinification takes place with gentle extraction, incorporating a proportion of whole harvest to preserve the freshness of the fruit. Ageing continues for 12 months, 30% of which is in new barrels.
