Tasting

Nose
The nose reveals an aromatic complexity marked by notes of citrus, peach and fresh bread.


Palate
In the mouth, this wine charms with its roundness and elegance, with a well-presented mineral vivacity.

Food and wine pairings

Ideal as an aperitif among friends, this wine also goes very well with a seafood platter, beechwood smoked salmon or even a matured dry goat cheese.

Storage

This wine can be tasted now but will continue to evolve until around 2027.

The refinement and precision of a Bourgogne Aligoté white wine

The property

The history of the estate dates back to 1984, when Didier Montchovet, a winemaker's son from Nantoux, bought a 0.5 hectare plot. Passionate, he adopted biodynamic practices from the start, thus becoming the first estate certified by Demeter. His visionary commitment to respecting the terroir accompanied the gradual expansion of the estate. Boris Champy, former technical director of Louis Latour, took over the estate respecting this same philosophy, while bringing his expertise and enthusiasm. Today, the Domaine Boris Champy extends over 12 hectares, including plots on the Hautes-Côtes de Beaune and Pommard, emblematic Burgundy terroirs.

The vineyard

This Burgundy wine is made from small plots at over 400 meters altitude.

Resting on marl and clay soils, the old vines from mass selection, are low yielding but of high quality, bringing complexity, richness and vivacity.

Vinification and ageing

The harvest is carried out manually at optimum maturity. Vinification takes place in vats and 228-litre barrels, with a long ageing on lees for 12 months. No use of new barrels for this cuvée, thus preserving the purity of the grape variety. The wine is then refined for a few months in vats before bottling. This wine is neither filtered nor fined, and may present a natural deposit.

Blend

100% golden aligoté, a traditional Burgundian grape variety that reveals all its aromatic richness and vivacity here.
